Strawberry | Spice Cake | Cherry

 Whole cluster conferment of fifty percent Pinot Noir and fifty percent Pinot Gris was put into a closed top stainless tank where it went through carbonic maceration for three weeks. It was then pressed to neutral barrels, where it finished out fermentation. After aging in barrel for five months, the wine was bottled unfiltered.

Whole Cluster Pressed and put to concrete egg and one new French Oak barrel. The wine slowly fermented and aged in barrel and egg for fifteen months before blending in tank and bottling. 25% New French Oak.

Unfined and Unfiltered.

Marzapan | Lychee Fruit | Foxy

Whole cluster pressed and native yeast fermentation, half went to concrete egg and a half to French oak barrels for fermentation. Once primary fermentation was completed, the concrete egg was racked to 3 neutral French oak barrels for aging. After 18 months, we selected our two favorite barrels and blended them together, where the wine rested for another 3 months in stainless steel. This Blend consists of Forty percent New French oak and Sixty percent concrete egg fermented and neutral barrel-aged Chardonnay.

2020 Heart White Blend made with 75% Chardonnay, 13% Riesling and 12% Pinot Gris.

This wine is with aromas of white peach, fresh papya, along with hints of white floral vanilla.

The bouquet is light with pleasant citrus accents of pink grapefruit and slightly sweet notes of wild strawberry and yellow peach. The savory finish leaves with a field flower and stone dry finish.

 2021 Chardonnay is crisp and vibrant with aromas of white flowers, lemon peel, tangerine, green almond and nutmeg. Finishing with a long, lingering acidity and a hint of vanilla bean.

Aged in Concrete Egg and French Oak.

Citrus Blossom | Lemon Candy | Radiant | 

Hand harvested and immediately  pressed directly to Concrete egg and Neutral French Oak barrel. Aged 5 months in each before racking and bottling. Partial malolactic. 

There is plenty of balanced acidity to pair this treat with favorite cheeses, spicy Asian dishes or enjoy it on its own.

Pink Rose Petals | Bing Cherry | Tart Raspberries

Pinot Noir fermented in stainless steel for two months. Once the fermentation reached precisely the right sugar level, the wine was bottled and continued fermenting in the bottle.

Aspen White Peach | Carmel | Pink Grapefruit

Our 2021 White Pinot Noir was aged in one Concrete Egg for six months on lees. It was then transferred to Stainless Steel for three more months before bottling.

 Whole cluster pressed to barrel - Aged 15 months in 80% neutral French Oak barrel and 10% New. 

Unfiltered -full body wine.
