2018 Craig's Reserve Pinot Noir, 750ml
Clove | Raspberries, and Cherry | Bold
100% destemmed into open-top fermenters and given a 5-day cold soak. A 13 day slow and cool native yeast fermentation followed. Once the grapes were done with fermentation, they were pressed to 33% new French oak. After 17 months of aging in barrel, the wine was bottled unfined and unfiltered.
